If you're looking for fresh summer recipes, how about a German-inspired cucumber salad? Even if it resembles the Greek tzatziki, you will discover new, versatile tastes and flavors that you can combine with a lot of other healthy dishes.

German cucumber salad is full of antioxidants, fiber, magnesium, potassium and vitamin C, all these elements being extremely beneficial in the summer months and beyond. In addition, cucumber is refreshing and moisturizing, which makes it perfect during this period!

You will need the following ingredients:
  • A fabio cucumber
  • 50 g red onion
  • 2-3 small cloves of garlic
  • 280 g unsweetened vegetable yogurt
  • An average lemon
  • A teaspoon of mustard
  • A teaspoon of maple syrup
  • 3-4 tablespoons chopped dill
  • Salt and pepper to taste
How to prepare cucumber salad?

For starters, take a large bowl and start preparing the dressing. Squeeze the lemon juice, then add the yogurt, mustard and maple syrup. Mix very well until you get a homogeneous sauce. Taste it and season with salt and pepper to taste.

Peel the onion and garlic. Finely chop the garlic. You can cut the onion just as small or julienne, leaving thin but larger strips to have a crispier texture. Add the onion and garlic to the dressing and mix again.

As for cucumbers, you can cut them into round and thin slices or you can use a long cutting tool to get long, thin strips, similar to tagliatelle. Add the sliced cucumbers to the sauce and mix slowly to keep them in shape.

At the end, sprinkle freshly chopped dill on top and serve the cucumber salad for a brunch, along with olives, fresh vegetables and possibly baked new potatoes.

Elena's kitchen

This recipe is part of my family's "heritage". I lived for a while with my adoptive father's family. I learned there some recipes that I have not found anywhere else. I called them, quite preciously, my gastronomic "heritage". Recently, however, I found a slightly different option, in Oltenia, also in a small area. The explanation I had is that the origin is the community of Bulgarian gardeners that exists in the two different areas.

This recipe is for any day from the Rina Diet - 90 Day Diet.

Here's what we need (the quantities are to everyone's taste):

-fresh cucumbers
-cold water (if necessary you can put ice cubes)
-lemon juice

Peel a squash, grate it and slice it thinly. Cut into small cubes or small slices.

Peel the onion and garlic. Finely chop the onion and crush each clove of garlic.

Put the chopped cucumber, onion and garlic in a bowl, add salt and cold water. Then it matches the taste of salt and sour with lemon juice.

It's a very good summer. It is a refreshing salad for any steak, vegetable type, spicy, sweet or neutral. Try it, don't be impressed by the fact that it looks like a soup, not like a salad!

Shrimp with bacon and yogurt salad

This is not the first time I have proposed a combination of shrimp with pork dishes, such as bacon. I really like the contrast of taste and aroma between fine, almost refined shrimp, and the rustic and strong flavor, with salty-smoky shades of bacon.

To this contrast is added another, the one between the refreshing yogurt sauce and delicately flavored with basil, and the hot skewers.

Kitchen: Radu's recipes
Amount: 2 servings
Difficulty: Easy
Preparation time: 5 minutes
Cooking time: Ten minutes
12 shelled shrimp (leave only the tails, if desired)
6 slices of bacon
125 g yogurt
1 tablespoon freshly chopped basil leaves
white pepper, ground
1 teaspoon lemon juice
1 tablespoon extra virgin olive oil
basil leaves, for serving
1/2 red bell pepper, chopped
12 bamboo skewers, soaked in water for 2-3 hours
Salt and pepper the shrimp. Wrap two in a slice of bacon. Then stick them in two skewers, so that they stay fixed and do not twist.
A grill is heated. Fry the shrimp wrapped in bacon for 3-4 minutes on each side, until the bacon is browned and the shrimp are done.
Meanwhile, mix the yogurt with salt, pepper and chopped basil. Put it aside.
Then mix in a jar with a lid, shaking the lemon juice with oil, salt and pepper. Combine this vinaigrette with the chopped pepper.
Spread 4-5 tablespoons of sauce on half of a plate. In the center of the yogurt, place half of the chopped pepper. Place 3 skewers next to the sauce. Garnish with fresh basil leaves and serve.

Let me share with you some interesting information I found!

Cucumber has its origins in ancient India. Since then, it has spread through Ancient Greece, Rome, Europe, the New World, China and eventually became the fourth most cultivated vegetable in the world.

In the Roman Empire, cucumbers were eaten by both the nobility and the common people. In Italy, they were popular because of their variety and tastes. In addition to their culinary use, cucumbers have been added to medicinal remedies, treating, among other things, vision, prostate and even scorpion bites or infertility problems. Can you believe it? Emperor Tiberius (14-16 AD), for example, asked to eat cucumbers daily for a whole year. During the summer, special gardens were set up where only his vegetables were cared for, and during the winter, cucumbers were grown in mobile seedlings exposed to sunlight all day, or even artificially lit with mirrors.

After the fall of the Roman Empire, cucumbers declined in popularity for a long time, until they reappeared on Charlemagne's estates in the eighth and ninth centuries and eventually reached England only in the fourteenth century. Unfortunately, they were not well received during this period, but they experienced a fierce popularity in the middle of the seventeenth century and since then have stood out in the preferences of the crowds.

Did you know that a cucumber is made up of 95% water and contains ascorbic acid and caffeic acid which prevents water from being retained in the body? Due to its high water content, it improves body hydration and eliminates toxins. Because it is full of antioxidants, it protects you from seasonal infections.

Beet and Yogurt Salad

Tzatziki of beets and yogurt & # 8211 recipe

The recipe we suggest is unique, because beets are used instead of cucumbers. It is not necessarily better than the classic recipe, but only more interesting, more attractive in color, but also healthier, given the countless therapeutic properties that beetroot has.

• 3 small red beets
• 470 g of plain yogurt (preferably Greek)
• 1 clove of garlic
• 1 tablespoon of lemon juice
• ½ teaspoon of grated lemon peel
• 1 tablespoon finely chopped dill
• ½ teaspoon of fine sea salt

Choose small or medium beets, because they are more colorful, healthier and richer in nutrients. In addition, the young beets are so soft that we don't even have to peel them after they are cooked.

Do not peel the beets. Wash them well, then put them to boil in a large pot. Leave them until the beets become soft. Try them with a fork. Drain the water and after they have cooled down enough, put them on the grater with large holes, or use the robot.

Mix the grated beets with the yogurt, finely crushed garlic, finely chopped dill, freshly squeezed lemon juice and salt. Mix well until smooth, then leave the salad in the refrigerator for at least an hour.

This dressing is always served cold, usually with crackers or glue.

More and more studies suggest that increased consumption of vegetables such as beets reduces the risk of obesity, cardiovascular disease, diabetes and mortality from any cause, helps with weight loss and increases energy levels.

The Russians, who are big consumers of beets (pickled or added to borscht), are famous for their long and healthy life. Beetroot has proven remarkable antioxidant, anti-inflammatory, detoxifying and anticancer properties.
