You will need the following ingredients:

  • 2-3 small cloves of garlic
  • 280 g unsweetened vegetable yogurt
  • An average lemon
  • A teaspoon of mustard
  • A teaspoon of maple syrup
  • 3-4 tablespoons chopped dill
  • Salt and pepper to taste
How to prepare cucumber salad?

For starters, take a large bowl and start preparing the dressing. Squeeze the lemon juice, then add the yogurt, mustard and maple syrup. Mix very well until you get a homogeneous sauce. Taste it and season with salt and pepper to taste.

Peel the onion and garlic. Finely chop the garlic. You can cut the onion just as small or julienne, leaving thin but larger strips to have a crispier texture. Add the onion and garlic to the dressing and mix again.

As for cucumbers, you can cut them into round and thin slices or you can use a long cutting tool to get long, thin strips, similar to tagliatelle. Add the sliced ​​cucumbers to the sauce and mix slowly to keep them in shape.

This recipe is part of my family's "heritage". I lived for a while with my adoptive father's family. I learned there some recipes that I have not found anywhere else. I called them, quite preciously, my gastronomic "heritage". Recently, however, I found a slightly different option, in Oltenia, also in a small area. The explanation I had is that the origin is the community of Bulgarian gardeners that exists in the two different areas.
