We prepare the meatballs for the first time. Chop the meat and mix it with 1 egg, a good handful of washed rice, salt and pepper. Stir until smooth.
With a wet hand we form the meatballs that we put in the pot in which we boiled the salt water. Let it boil and froth.
When they have risen above the water, add the onion and the other finely chopped vegetables.
Let it boil for 10-15 minutes then add the rest of the well-washed rice. Let it boil.
When the vegetables and rice have boiled, add the tomato juice and cabbage juice. Let it boil, then add the finely chopped tarragon and larch. Taste and season with salt, if needed (cabbage juice is salty!)
Serve hot with chopped green parsley and hot peppers.
